Sweet and Sour Sauce


Sweet n Sour Chicken Stir Fry.
I made it with the brown sugar this time
and added a bit of honey to the pot! So good!!



This recipe is a slight modification of Wow! Sweet and Sour Sauce and cut in half.

1 cup water
3/4 cup white sugar (can use brown sugar)
1/2 cup ketchup
1/2 can of pineapple tidbits with juice (substitute crushed pineapple if desired)
1/3 cup apple cider vinegar (or distilled white vinegar)
1 1/2 teaspoons soy sauce
1 1/2 teaspoons Worcestershire sauce (or favorite steak sauce)
1/4 teaspoon hot sauce (optional)
red pepper flakes to taste (optional)
garlic powder to taste (optional)
ground ginger to taste (optional)
1 1/2 tablespoons cornstarch

Stir water, sugar, ketchup, pineapple, vinegar, red pepper flakes, soy sauce, Worcestershire sauce, and hot sauce together in a saucepan over medium heat. Remove 1/2 cup of the sauce to a small bowl; whisk cornstarch into the sauce in the bowl. Bring the sauce in the saucepan to a boil, stir the sauce with the cornstarch into the boiling sauce. Cook, stirring occasionally, until thickened, about 15 minutes. Remove from heat and allow to cool slightly before using.

*Thicken with cornstarch to suit your personal taste.



 


Note: I have enough Sweet and Sour Sauce to make about 3 more meals!!
I will definitely try this recipe again. 


For Stir Fry:

Sliced Onions
Sliced Bell Pepper
Diced Chicken. 
Chopped Scallion

Get wok hot with a tablespoon or two of oil. Salt & pepper chicken. Stir fry the onions and bell pepper just a bit and  cook until veggies are tender to eat but not soggy - remove from wok. Add in more oil if needed and stir fry chicken until done. Add vegetables back into the pot and pour some of the sweet and sour sauce into the wok - add as much or as little as you wish. Stir well and serve over rice. Top with scallions.
