Fresh Herb Butter

 

Inspired by 'The Little Peasant'

Delicious on Toast - would be great on meat and vegetables.

 

1/2 cup unsalted butter, softened (you can use salted butter IF you omit the salt from the recipe)

1/4 tea. salt (omit if using salted butter)

2 table parsley, finely chopped

2 table. chives, finely chopped

2 teas. lemon juice

Black pepper, to taste


Add butter to a bowl and fold in the rest of the ingredients until well mixed. Butter is ready at this point to use OR you can form the herb butter into a ball and cover well in plastic wrap. Herb butter will keep up to 2 weeks in the fridge.

Dwarven Mustard

 

 Dwarven Mustard with a dollop of Sriracha.

 

1/2 cup Stone-Ground or Brown Mustard

1/4 cup Sour Cream


In a small bowl, mix together mustard and sour cream. Stir before serving. Store in the fridge in an airtight container. 


*For extra flair, add a large dollop of Sriracha or other favorite hot sauce. Mix it into the mustard before using. 

*A perfect condiment for dipping your finger foods or to spread onto breads for sandwiches.

2 Kinds of Elven Butters

 

Left: Herb Butter; Right: Lemon-Honey Butter

Both are spread on a good homemade bread.


Herb Butter:

1/2 cup softened butter

2 Table. fresh chopped herbs or dried herbs. Take your pick of any herbs: garlic, basil, oregano, thyme, rosemary, sage, chives, onions etc... mix and match the herbs of choice.


Mix the softened butter with the herbs well. Store in airtight container in the fridge. 



Lemon-Honey Butter:

 1 cup softened butter

2 Table. lemon juice

2 Table. honey


Mix softened butter, lemon juice and honey together well. Store in airtight container in the fridge.
