Garlic Shrimp Alfredo









In sauce pan, saute shrimp in butter and olive oil, set aside. In same sauce pan saute diced onions & diced mushrooms - add spinach when other veggies almost done. Cook down 2 to 3 minutes. Remove from sauce pan the vegetables. Add more olive oil in pan if necessary and  saute diced garlic - add in milk and follow recipe below.
  1. Alfredo Sauce:
    • ½ cup butter
    • 1 pint (2 cups) heavy whipping cream, half & half or milk. ( I used milk)
    • 4 ounces cream cheese
    • ½ teaspoon minced garlic
    • 1 teaspoon garlic powder
    • 1 teaspoon italian seasoning
    • ¼ teaspoon salt
    • ¼ teaspoon pepper
    • 1 cup grated mozzarella cheese

    1. In a medium saucepan add butter, heavy whipping cream, and cream cheese. Cook over medium heat and whisk until melted.  
    2. Add the minced garlic, garlic powder, italian seasoning, salt and pepper. Continue to whisk until smooth. Add the grated parmesan cheese.
    3. Bring to a simmer and continue to cook for about 3-5 minutes or until it starts to thicken. Toss it with your favorite pasta!

    2. Add back on the vegetables and shrimp. Keep warm on low. Add in cherry tomatoes and black olives if desired.

    3. Make your pasta. Use your favorite. I used penne for this recipe.

    4. Serve with a nice garlic bread and enjoy.
