Authentic Chicken Tacos


Sauce Ingredients
Onion, finely diced
Garlic, finely diced
Paprika
Chilis (Chili Powder okay)
Garlic Powder
Oregano
Cumin
Salt
Black Pepper

*All above are to taste!!

For later use
Chicken Breast
Salsa
Cilantro (for topping, optional)
Corn Tortillas

*Variations: Beef, Pork, Fish or ***Shrimp Tacos instead of Chicken.


EASY -- cut up some chicken breast (hunks of meat).

Place chicken into a pot, add enough water to cover the chicken. Add in all of the sauce ingredients into the water and the chicken (or other meat if using). Cook down until most all of the liquid is gone - very little in the pot. - this will take about about 30 minutes or so. Then remove chicken from the pot and  shred chicken - put back into the pot and mix with the sauce. If still lots of liquid left, cook down longer. Reduce the sauce until not much left but the meat is not dry. -- Taste and adjust for seasoning. Meat is ready. Mix the meat with a little salsa before serving is optional.


Heat CORN Tortillas, top each shell with some meat filling, lime crema, freshly chopped cilantro and more finely diced onions sautee (if desired). 

Serve Tacos with some Guacamole, Jalapeno Poppers, Lime Crema  or Salsa.

Lime Crema for topping

  • 16 oz sour cream (OR 8oz of sour cream and 8oz of mayo)
  • 2 big limes, about 2¼" diameter
  • ½ tsp granulated garlic
  • ½ tsp salt
  1. Empty sour cream into a small bowl and set aside.
  2. Roll the limes on counter for about a minute each to loosen up the juices.
  3. Zest both limes, ensuring you are ONLY getting the green part of the peel and not the white part.
  4. Cut the limes through the middle and using a juicer, get all the juice out.
  5. Add all the zest, juice, granulated garlic and salt to the sour cream and whisk well to combine. Place in the refrigerator until it's time to serve. Note that letting the lime crema sit for at least 4 hours helps the flavors to meld together better, but you can enjoy it right away too.
  6. Store leftover lime crema in the original sour cream container and label it!
*Variation to Lime Crema -- Add 8 oz sour cream and 8 oz real mayonnaise

Serve meal with a slice of lime, fresh Guacamole and some Stuffed Jalapenos
