Frittata
Frittatas are a great way to use up items where it's not quite enough to make another meal - yet too good to throw out. Use leftover meats and veggies - add cheese if you wish. Deck them out with your choice of herbs and spices. Feel free to get creative with your Frittata.
My Frittata today: I had leftover sausage and bacon. I mixed the meats with some onion, bell pepper and garlic - sauteed it all a little and then let that cool off. Beat together 3 eggs with some salt, pepper and grated cheeses - poured eggs over the meat mixture in a 6 in cast iron skillet. Baked it in a 350F oven for 15 to 20 minutes.
