Clarea-d-Agua-art (Spiced Honey Water)

Spices:

Ginger three parts (crushed/ground)
Cinnamon two parts (crushed/ground)
Cloves and grains of paradise one part each (crushed/ground)
*Note: if you cannot find grains of paradise you can substitute black 
or white peppercorns (crushed/ground).

Mix all spices together - set aside.


I cut the recipe down to make 2 cups instead of a gallon.

Clarea de Agua recipe:

1 gallon water
8 oz honey
2 oz mixed spices.

Boil the honey and water together, skim off the foam, then remove the 
pot from the  fire and added the crushed spices.  Let it steep overnight, 
then strain out through some fine cheesecloth or other fine cloth.

The drink is smooth, a bit spicy, and not overwhelming, a good 
accompaniment to any Medieval Feast.

The recipe can be used as a starting point for other drinks, using different spices in different proportions.  Use whatever takes your fancy. The important thing is to use a light hand with the spices, especially the cloves.
