Hobbiton Herbal Garlic Beer, Jalapeno & Cheddar Sourdough Flatbread

This particular flatbread is much like breadsticks and can be cut
 and shaped into breadsticks and baked if desired!

Recipe for 1 Flatbread: you can double or even triple this recipe:

**1/4 cup  Sourdough Starter (you can use the "throwaway" starter for this).
1/4 cup Beer (a good Dark Stout works best but any beer or ale will do. Can use water instead of beer).
1/4 cup plain White Flour
1/4 to 1/2 teaspoon Garlic Powder (to taste, optional)
1/4 to 1/2 teaspoon Herbal Blend (of your choice)
Pinch of Salt
Cheddar Cheese, shredded (add as little or much as you wish) (can use other cheese type)
Jalapenos, chopped, optional (can use other types of peppers)
Olive Oil, enough to coat the bottom of a skillet
Pat of Butter
Parmesan Cheese, grated (topping is optional) (can use the green can stuff)
Sea Salt (topping is optional)

Mix together sourdough starter, beer, flour, garlic powder, herbs & pinch of salt. Fold in jalapenos and cheddar. On a floured surface, gently knead the dough -- if too sticky incorporate a little more flour; if too wet add in a small splash more of beer or water. Dough should almost stick to you and almost stick to surface but doesn't when ready. Shape into a ball and let rest 10 minutes.

 Pat the dough into a roundish shape or oblong. Let rest again while you are heating the olive oil and butter in skillet on high heat. When the pan it hot put in the dough and cook until golden brown both sides - 3 to 5 minutes per side.

Top with parmesan, sprinkling of sea salt and drizzle on more olive oil if desired.

*Oven Method:  Place dough on grease backing sheet. Brush tops with melted butter or olive oil. Bake at 425 F on middle oven rack for 10 to 15 minutes or until golden brown.

**IF you don't have  Sourdough Starter you can still make this by mixing together 1/4 cup more flour and 1/4 cup more water/beer in place of the Sourdough Starter.
