Sméagol's Cod Cakes
3 medium potatoes, peeled and shredded
2 eggs
salt and pepper to taste
1 teaspoon Italian seasoning
1/2 pound cooked flaked cod
3 green onions, chopped
3/4 cup dry bread crumbs
1 cup oil for frying, or as needed
Cook your cod by poaching it in water and lemon juice. Drain cool and flake. Sit aside.
Grate your peeled potatoes. Squeeze out as much of the liquid as possible - then pat dry.
In a bowl, mix your potatoes, cod, seasonings, green onion, eggs and breadcrumbs. Shape into about 12 patties.
Heat 1/4 inch of the oil in a skillet on medium heat. Fry the patties 3 minutes per side or until golden brown. Drain on paper towels. Add more oil to the skillet for frying the rest of the cakes.
Serve warm.

Umm, Smeagol hated cooked fish, he thought cooking fish was an abomination.
