Wolfgang Puck's Pizza Dough



Ingredients:
1 package (2 1/4 teaspoons) dry active yeast
1 teaspoon honey
1 cup warm water (105 degrees F)
3 cup all-purpose flour
1 teaspoon kosher salt
1 tablespoon extra-virgin olive oil, plus more for brushing

cornmeal, for dusting pans
pizza sauce
toppings of your choice


 In a bowl, add pack of dry yeast, honey and 1/4 cup warm water. Let the yeast proof. 

In another bowl add 1 cup of flour & salt, mix together. Mix in oil & yeast water then add another cup of flour and mix in. Add 1/2 cup of flour and mix until it's annoying to mix then with last 1/2 cup of flour, flour your area and place dough on it. Knead dough for around 5 minutes until smooth & elastic. Place in a greased bowl - cover all of the dough with clean damp towel & let rise in warm place for about 30 to 40 minutes or until about doubled in bulk.

Dust pizza pans with cornmeal lightly - sit aside.

When dough has risen, place it on floured cutting board and deflate it. Dough it ready to shape. Cut into 4 pieces for small pans, 2 pieces for medium or leave whole for large pizza - no matter which you chose, shape the dough into balls. Cover and let sit in warm place for about 20 to 30 minutes.

When dough has risen slightly, press out into your pizza pans, brush with olive oil then add sauce & toppings. 

Cook at 450F on bottom rack for about 5 minutes then move pizzas to middle rack and cook for another 5 minutes - 10 minutes total cooking time. Let cool slightly, cut & enjoy!
