BBQ Chicken Subs


1lb (16 oz) chicken (breasts, thighs, legs - your choice)
Water, to cover the chicken
Sub Rolls
BBQ Sauce - ready made or make your own:

BBQ Sauce Recipe:

Put your chicken in a large pot - fill with enough water to cover it. Bring to a boil and cook for 35 to 45 minutes. When done, strain and let the chicken cool off then shred it - removing and discarding all traces of bone, skin, gristle and fat. Sit aside to make the sauce.

In a blender, combine brown sugar/honey, ketchup, vinegar, water, Worcestershire sauce, hot sauce and all seasonings.  Blend until smooth. Taste and adjust for seasonings.
Note: This will fill a 32 ounce ketchup bottle exactly. Cut back on the brown sugar/honey to make it less sweet, or add more Worcestershire for more 'steak sauce' appeal.

Pour sauce over the shredded chicken and mix well - place in a sauce pan to heat the chicken and sauce if it has cooled down too much. Serve on sub rolls.
