4 large potatoes peeled and diced
2 cups veggie or chicken stock
2 cups milk
1/2 cup onion, dice
1/4 leeks or green onion, chopped
2 tables. flour
2 tables. fresh herbs of choice, chopped. Garlic and chives are good in it as well
6 strips bacon
Salt and pepper to taste
Fry bacon in a large pot until crispy. Remove and set aside.
Add onions and leeks to drippings and sautee to softened. Add in potatoes and stock.
Mix flour and milk to thicken the soup and pour in mixing well.
Adjust seasonings and add in herbs if using.
Bring to a boil, lower heat and cook around 30 mins. on mediym-low heat.
To serve, top with crumbled bacon and chives.
