Turkey and Greens Finger Sandwich

 


1 batch of flaxseed flatbread, loaf bread or crackers
Brown or stone-ground mustard
Honey for drizzling, optional
Black pepper, to taste
Fresh greens (spinach, endive, sorrel, tarragon, arugula or other)
Leftover roasted turkey, shredded or sliced (or cold cuts)
 
Spread bread or crackers with mustard, top with pepper. Layer on the turkey and greens then drizzle with honey if using. Top with another slice of bread or crackers and press down lightly. If using bread instead of crackers, cut the sandwich in half for serving.

*I used cold cuts instead of leftover turkey and rye bread instead of the flaxbread. Good combo - turkey, spinach, pepper, stone ground mustard and honey.
