Deli-style Crab Salad


 

1 lb imitation crab meat

1/4 cup light mayo

1/4 cup of greek yogurt

1/2 of a lemon, juiced

1/4 cup of celery, chopped

2 tablespoons of red or sweet yellow onion, finely chopped

Salt and Pepper to taste

 

Dice the onions and celery really fine and add them to a bowl along with the rest of the ingredients for the salad. Squeeze 1/2 a lemon over the salad and mix again. Serve with crackers, on buns, over a bed of lettuce or just eat as is with a spoon. Store leftovers in the refrigerator.
