Frybread

 

2 cups AP Flour

2 teas. Baking Powder

1 teas. Salt

1/4 cup Milk, plus more as needed

Vegetable Oil, for frying


Mix together flour, salt and baking powder. Gradually add in the milk to make a soft dough that isn't too sticky. Turn out onto a lightly floured board and knead the bread for 5 minutes or until the dough is smooth and bounces back when poked. 

Divide the dough into 8 pieces. Roll out each piece of dough to about 7-inches across. 

Heat about 1-inch of vegetable oil in a skillet over medium heat. Once the oil is hot fry the bread, one piece at a time, by lowering it into the skillet of oil. The bread should puff up in the skillet and turn a golden brown on the bottom. When that happens, flip the bread over and fry the other side until it's golden brown. Remove from the skillet to a plate lined with a paper towel. Repeat with the remaining pieces of bread until all are cooked. 

If possible, tip the flatbreads onto their sides to drain better. 

Best served warm. You can eat plain or top the flatbread with your favorite herbs, spices or other toppings you desire.
