Gil-galad's Kale-Cranberry Salad

 

Salad:

Finely Chopped Kale

Finely Shredded Carrots

Red Onion, thinly sliced

Dried Cranberries

Dried Cherries

Chopped Pecans

Parmesan Cheese

Finely Crushed Croutons  


Toss all ingredients together. Top with a Mustard Vinaigrette. Add some sliced cucumber and a side of grapes for a full salad.

 

 Mustard Vinaigrette:

1/2 cup White Vinegar

1 table. Honey

 1 table.prepared Dijon Mustard

2 tea. Salt

1/2 tea. Pepper

2 tea. Garlic, chopped extra fine

1 cup Vegetable or Olive Oil

4 drops Hot Sauce, optional

Whisk all ingredients together. Chill. Serve over salad.
