2 cups AP Flour
1 tea Baking Powder
1/2 tea Baking Soda
1/4 tea Salt
1 tea Cinnamon
2/3 cup Oil (sunflower, vegetable or canola)
3/4 cup Honey
1/2 cup Sugar
1/4 cup Brown Sugar (dark or light)
Juice of 1 Orange and Orange Zest
2 large Eggs, room temperature
2/3 cup Coffee (made with instant coffee and cooled to room temperature)
*Nuts (use one kind or a mix of nuts. Use as many or as little as desired, optional)
*Powdered Sugar (for dusting top of baked cake, optional)
Preheat oven temperature to 325 F. Spray a 9-inch square baking pan with Baker's Joy (oil and flour mix).
In a bowl, mix together flour, baking powder, baking soda, salt, cinnamon, sugar, brown sugar.
In another bowl, mix together oil, honey, orange juice and zest, eggs and the coffee.
Make a well in the dry ingredients then slowly pour the wet ingredients into the dry and mix well.
*Mix in nuts at this point if you are using them.
Pour the cake mixture into the prepared baking pan. Tap bottom of pan to remove the air bubbles.
Bake at 325F for 40 to 45 minutes or until the cake tests done.
Cool the cake in the pan completely. Top with powdered sugar.
Serve the cake from the same pan you baked it in if desired.
Recipe is similar but not identical to Beorn's Moist Honey Cake
