Magic Hot Rolls

 


1/4 cup warm water

1 pack active dry yeast

1 table. sugar

1/2 stick or 4 table. butter

1/2 cup milk

1 large egg

1 large egg yolk, reserve egg white for washing

2 1/2 cups SR flour

1/4 cup sugar

1/2 tea. salt


Mix warm water, 1 table. sugar and dry yeast. Let sit 5 to 10 minutes to activate (should look puffy).

Place butter and milk in a saucepan and warm on low until the butter just melts. Remove from heat. 

Wisk together egg and egg yolk. Add in the slightly cooled milk and mix well. 

In a large bowl, mix together the flour, salt and 1/4 cup sugar. Gradually pour in the milk mixture and add in the yeast water. Mix until all flour is wet. 

Pour onto a lightly floured area and knead for 5 to 10 minutes or until smooth and elastic.

Lightly oil a large bowl and add in dough - turn to coat dough in oil. Cover, and let sit in a warm, draft-free area to let rise for 1 hour to 2 hours. 

When dough has doubled in size punch down and divide into 8 pieces. Shape into 8 rolls.  Let rise for another 1 to 2 hours or until rolls have doubled in size.

5 Regular Rolls

3 Cloverleaf Rolls

Preheat oven to 350F. 

Beat the egg white and "paint" it on the rolls. The egg wash will give you a shine to your rolls when fully cooked. Bake in the oven for 15 to 20 minutes or until the bread sounds hollow when tapped. 

Cool on wire cooling rack. Serve warm or cooled.
