12 fresh jalapenos
Salt
1 link boudin (Lousiana rice sausage)
12 slices raw bacon
toothpicks, as needed
Slice the jalapenos in half
lengthwise. Carefully scrape out the seeds and white membrane. Parboil the prepared jalapenos for 1 minute. Drain and lightly
salt the insides of the jalapenos if desired.
Remove the casing from the boudin and crumble the meat. Stuff each jalapeno with the boudin.
Wrap each jalapeno half with a half-slice of bacon, securing the ends with toothpicks as needed.
Place the jalapenos on a baking sheet. - At this point you can put plastic wrap around the them and place in the fridge to cook later.
When ready to cook, preheat the oven to
350 degrees F and cook for 45 minutes or until the jalapenos are soft and the
boudin is heated through. The jalapenos can also be grilled instead of baking in the oven.
Remove the stuffed jalapenos from the oven and serve hot.
Note: You can mix the loose boudin with softened cream cheese then stuff the jalapenos for a variation.
