Lluriwood Salad

 

 

Dressing: 

2 1/2 teas. cherry vinegar (substitute with red wine vinegar if necessary)

1 teas. fresh lemon juice

3/4 teas. Dijon mustard

2 table. shallots, minced

Salt/pepper, to taste

1/4 cup olive oil


Whisk together all the above ingredients. Taste and adjust seasoning to your liking. 


Salad:

8 cups baby spinach leaves

1 log of goat cheese or feta cheese, crumbled

2/3 cup candied or spiced pecans, broken into bits

1/2 cup dried cranberries and/or raisins 


Toss all ingredients together. Serve in bowls and drizzle with the dressing. 

 

*I was out of feta and goat cheeses so I substituted with Parmesan.
