4 table. butter
1 table. oil
1 small shallot, finely chopped
1lb small turnips, peeled and diced
1 1/4 cup orange juice (freshly squeezed or bottled)
Salt/pepper, to taste
Heat the butter and oil in a saucepan, add in the shallots and saute until soft but not browned. Add in the turnips and let simmer on medium-low heat until it seems the turnips are adsorbing the butter. Pour in the orange juice and let simmer on medium-low heat for 30 minutes with a lid on the pan. Stir occasionally while cooking. Remove from heat and add salt/pepper to taste.
The orange-butter sauce will be slightly thicken on it's own.
