These morsels can be served as dessert or breakfast because it's not overly sweet.
Butter for greasing pan
2 cups AP flour
2 tea baking powder
1/2 tea baking soda
1 1/2 tea cinnamon
1 tea nutmeg
1/2 tea cloves
1/4 tea salt
3 large bananas
1 large egg
2 table vegetable oil
2 tea vanilla
Heat oven to 375f.
Lightly grease 8-in baking pan with butter.
Put flour, baking powder, baking soda, cinnamon, nutmeg, cloves and salt in a bowl and stir together.
In another bowl, mash the bananas then mix in the egg, oil and vanilla. Mix dry ingredients with the wet ingredients. Pour batter into the buttered pan and place into the oven. Cook 30 to 35 minutes or until a toothpick inserted in the center of the cake comes out clean. Transfer the cake to a wire cooling rack. Cut into squares.
Variations: Before serving, mash another banana and top each slice of cake with the mashed bananas and eat right away.
Another idea is to top the slices with powdered sugar.
