Shire Country Fried Potatoes
Oil, Shortening or Bacon Grease for frying - just enough to cover the bottom of the pan.
4 to 5 red potatoes - sliced or diced.
Onion and Bell Pepper sliced or diced (as much or as little as you want).
Salt/Pepper to taste.
Leftover Cooked Bacon.
Heat oil in skillet, fry potatoes. Lower heat and put lid on top to slow cook and soften them. When the potatoes are almost done add onion and bell pepper - finish cooking. Crumble bacon in the skillet over the potatoes - heat though and serve.
*Just add more potatoes for more people.
*Can be made over campfire too
Variation: Add eggs: Scrambled or Fried to leftover potatoes. Heat potatoes in a little more grease or oil, move potatoes to make a "well" for each egg for fried eggs. For scrambled, beat eggs and add to potatoes and scramble together.
