Lobelia's Lemon Zinger Cake


  • 2 cups (250g) plain flour
  • 2 teaspoons baking powder
  • 1 cup (220g) white sugar
  • 1 teaspoon salt
  • 1/2 cup (125g) butter
  • 1 egg
  • 1 cup (250ml) milk
  • 1 teaspoon vanilla essence
  • 1 to 2 teaspoons lemon essence or juice
  • Zest of 1 lemon 


Preheat oven to 180 C/ 350 F. Pre-grease and flour a loaf tin.

In a large bowl, mix flour, baking powder, sugar and salt. Cut in butter. Break 1 egg into a measuring cup and then fill to the 1 cup line with milk. Add to dry ingredients and beat well. Add vanilla, lemon zest and lemon juice then mix well.

Pour batter into loaf tin. Bake at for 30 minutes or until a toothpick inserted into the centre of cake comes out clean.


Icing:
2 tablespoons of lemon juice
1 1/2 cups icing sugar

Mix together and pour on top of cake when still warm.
