Bilbo's Old Fashioned Buttermilk Biscuits



2 cups self-rising flour
*1/4 teaspoon baking powder, optional
*1/8 teaspoon salt, optional
*1 teaspoon sugar (add 2 to 3 teaspoons for sweet biscuits), optional
1/4 cup shortening
2 tablespoons butter
3/4 cup buttermilk (sweet milk can be used in place of the buttermilk)
Melted butter for brushing on top

*Extra baking powder and salt is there to help the bread to rise a little higher.
*Sugar is for helping them to brown but not make them sweet. For sweeter biscuits add the 2 to 3 teaspoons to the flour.

1. Heat oven to 450 F.
2. Mix flour, *baking powder, *salt & *sugar together.
3. Add in shortening and the 2 tablespoons of butter into the flour. Using your fingers or a pastry cutter - mix in the shorting and butter until it looks like small peas.
4. With a mixing spoon, mix in the milk until it all just comes together - all the flour wet.
5. Dust a surface lightly with flour.
6. Place dough on the floured surface and gently create a "tube" with it - about 2 1/2 inches round. Pinch off some dough and roll in hand - creating a ball. Each ball should be roughly slightly larger than golf ball sized.
7. Put each ball of dough in seasoned iron skillet and slightly press the tops down a little - but not flatten the dough.
8. Brush all the biscuits with butter then add about 1/4 to 1/3 cup of  the butter to the bottom of the skillet.
9. Bake at 450 for 15 to 20 minutes.
10. When out of the oven, brush the tops again with more melted butter.

Makes 10 to 12 biscuits.

Storage: Put in air tight container: ziplock, bowl with lid,  plastic wrap or aluminum foil. Can be stored on counter top for 1 to 2 days or in the fridge for about a week.

To reheat: Wrap biscuit with damp towel (paper or cloth) and put in microwave for 20 to 30 seconds.


They come out light and fluffy!
