Spanish Omelette
Onions, chopped
Bell Pepper, choppped
Jalapenos, chopped
Garlic, minced
2 or 3 Eggs, beaten
Shredded Pepper Jack Cheese
Salsa
Saute the veggies in butter and a little olive oil. Beat 2 or 3 eggs with liquid from prepared salsa. Pour eggs into skillet with veggies cook omelette - lift cooked eggs with spatula and tilt pan so uncooked eggs go underneath. Add salsa and cheese to one side - the flip the other side over on top.
Slide onto plate when done. Top with chopped scallions, sour cream, lime crema, salsa or more cheese.
