Elven Herbal-Onion Rice



1 cup White Rice (long grain)
2 cups Chicken Broth (or Water plus Chicken Bouillon)
1 small Onion, chopped (or 1/2 of a large Onion)
1 to 1 1/2 tablespoons Herbs of Choice (dried or fresh chopped)
1 1/2 tablespoons Butter, Margarine or 1 tablespoon Olive Oil
Pinch of Salt or Garlic Salt

* I used Herbes de Provence & Red Pepper Flakes - but use what blend you like.


1. Rinse rice OR not - this step is personal preference.
2. Put rice, butter (or oil), onions, herbs, salt and broth/water in a pot.
3. Bring mixture to a boil.
4. Put lid on pot and lower temperature under the pot to very low.
5. Let simmer 10 to 15 minutes (lid on).
6. Turn off the heat under the pot. 
7. Take off lid and "fluff" the rice to mix the herbs - gently.
8.  Put lid back on pot and let rice sit for 5 to 10 minutes longer on the warm burner.
9. Enjoy!
