Jamaican Jerk Sauce

Jamaican Jerk Sauce

***IF the Scotch peppers are too hot for you or you just can't get them, 
you can use any hot pepper you want or a combination of hot peppers.


1/2 of a large Onion chopped or one whole small Onion (White or Yellow), roughly chopped
6 to 8 roughly chopped Garlic cloves
1/2 of a Scotch Pepper (adjust heat to taste by adding more or less of the pepper), roughly chopped
2 Scallions (Green Onions), roughly chopped
1 Tablespoons Olive Oil
2 to 3 Tablespoons of Lime Juice
Few sprigs of Fresh Thyme (can use about 1 to 1 1/2 teaspoons of dried)
1/2 to 1 Tablespoon of Brown Sugar or Honey (if you want some sweetness), optional
1 teaspoon Cinnamon
1/2 teaspoon Nutmeg
1/2 teaspoon Allspice
1/2 teaspoon Ginger
A small handful of Peppercorn (to taste)

 In a blender, throw all ingredients into it and blend well.

*Adjust herbs and spices to taste.

Store in airtight container in the refrigerator  - will last up to 6 months.
