Leftover Mashed Potatoes Works Great for this Recipe
1 cup Mashed Potatoes
1/2 cup Flour
1 small Onion, diced (optional)
1 Egg
Salt/Pepper, to taste
Mix all together except oil. Heat a little oil in a skillet - just enough to cover the bottom of the pan. Wet hands so the mixture will not stick to your hands and shape potatoes into paddies. Carefully lay the patties into the skillet. Cook until golden brown on both sides - 4 to 5 minutes per side. Drain on paper towels and serve warm.
*Variations to add into the potato mix: Garlic, Scallions, Bacon Bits, Bell Peppers, Hot Peppers, Shredded Cheese, Seasonings (Herbs/Spices) - other, get creative.
