Fried Cornbread


1 cup Self-Rising Cornmeal
2/3 cup Milk or Buttermilk
1 Egg
Pinch of Salt
Oil, Shortening, Lard or Drippings for frying.

Mix together cornmeal, salt, milk and egg. Let stand 30 minutes before using.



Heat oil in skillet and ladle one spoonful into pan as you would for pancakes. Cook first side 1 to 2 minutes - you can tell when the outside turns brown - then flip and cook other side 1 to 2 minutes. Drain on paper towels.
