Honey Banana-Nut Bread


2 cups flour (all purpose or bread)
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon, optional
1/4 teaspoon allspice, optional
1/4 teaspoon nutmeg, optional
1/2 cup butter
1/2 cup brown sugar
1/4 cup honey
2 eggs, beaten
2 1/3 cup bananas, mashed well (ripe to overripe)
1 teaspoon vanilla, optional
1/2 to 1 cup nuts (your favorite), optional

Heat oven to 350F. Lightly grease a 9x15 inch loaf pan.

In a large bowl, combine flour, baking soda, spices and salt. In a separate bowl, cream together butter, honey and brown sugar. Stir in  butter mixture and nuts into the eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten - do not over mix. Pour batter into prepared loaf pan.

Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
