Sam Gamgee's Herbal Potato Mash


6 to 8 large Red Potatoes, cleaned, diced - skin on or off (your choice)
1 stick Butter
1/2 cup Milk or Cream, as needed
1/4 cups Sour Cream 
2 teaspoons Garlic Powder
1 teaspoon Onion Powder
1 teaspoon Parsley
1/2 teaspoon Thyme
1/4 teaspoon Rosemary
1/2 to 1 cup Scallions, diced
Salt/Pepper to taste

 Boil diced potatoes 20 to 25 minutes. Drain potatoes. With a masher or ricer (or mixer) mash your potatoes well with butter and and part of the milk/cream, add more milk/cream as needed. Fold in the rest of the ingredients when potatoes are well mashed. 

*Add more milk/cream and butter if mash is too dry.


*Top with crumbled Bacon and/or shredded Cheese.
