Grilled Cheese

Recipe:

Bread, sliced (a good Homemade Bread is best)
Cheese, grated or sliced (anything but the American)
Butter

Heat a skillet on medium heat. Butter both sides of your bread. Fry one piece of bread on one side until browned then remove it from the pan. Add another slice of bread and fry it down until browned then flip it over in the pan. Top with cheese then place the other slice of bread with the uncooked side up and the cooked side down. When the one side is browned, flip the sandwich over and brown the final side. -- You are ready to eat.

You are browning both sides of both pieces of bread in butter and then allowing the cheese to melt in between them with this method.

Tips:

*If adding meats or veggies, add them on top of your cheese before you top with the other slide of bread.

*Try adding some herbs and spices to your butter - mix well then spread on the bread.

*Another tip is to use mayonnaise on one side of the bread and  butter on the other side. Both sides are fried as stated above - but some like the added flavor of the mayo.

Variations:

Use your favorite cheese or a combination of cheeses. Cheddar, Gouda, Fontina, Gruyere, Colby, Monterey or Pepper Jack, Mozzarella, Swiss, Muenster or even Blue Cheese are good choices - but don't limit yourself to these - you know what you like - use it.

Use your favorite breads: White, Wheat, Rye, Pumpernickel are a few nice choices. Make your own Crusty White Loaf, an Herbal Bread, an Onion Loaf, a Irish Soda Bread or a good Sourdough - slice it up and use it.

Grilled cheese doesn't have to be boring sandwich you had growing up - you know white bread and American cheese slices - instead it can be one of the best sandwiches you've ever eaten if done right.  I have blogged the basic recipe - it's up to you to make it as you like it.
