Hobbits Herby Mashed Potatoes with Cheese



560 grams or 1 1/3 cup of Yukon gold potatoes
1/4 cup sour cream
1/4 cup butter
Salt/Pepper, to taste
Parsley, to taste
1/2 cup grated cheddar

*I couldn't find the Yukon gold so I used the small red potatoes with skin on.

Cook the peeled potatoes until soft. Strain and place in a deep bowl. Mash to break down potatoes. Add the remaining ingredients except the parsley. Mash to get creamy consistency. Add the herb and adjust the seasoning, and sprinkle cheese over it. Serve warm.
