Lord of the Ribs
3lbs Pork Ribs (or *Beef)
1 teaspoon Oregano
2 teaspoons Thyme
1 cup Worcestershire Sauce
1 teaspoon black pepper
*1 tablespoon salt
*Garlic Powder, to taste
**Orginal recipe never specified beef - but I used beef ribs.
**I lowered the salt to 1 tablespoon; the original recipe has 2 1/2 tablespoons cooking salt - Worcestershire Sauce is salty.
**I added garlic powder to mine; the original recipe didn't call for any.
Boil water in a large pot, add pork (or beef) ribs. Season the water with salt and pepper, cover and cook for 20 minutes or until ribs become tender. Drain and set aside.
Preheat oven to 300F.
Place ribs in a baking dish, smear ribs on all sides with the herbs, spices and Worcestershire sauce. Transfer dish to oven and bake 80 minutes. *I covered my ribs in tin foil so they will not dry out.
Remove from oven and let stand for at least 10 minutes. Serve warm.
*Rangers can cook over a campfire (ribs can be grilled).
