1 8-oz packet of Cream Cheese, room temp
2 4-oz packets of Feta Cheese, room temp
1 or 2 table of Sour Cream, optional *this add more tang to the cheese
Beat with a mixer until smooth the cream cheese, feta cheese and sour cream (if using). Shape into a round log. Wrap well with plastic wrap. Chill.
*Once chilled, you can roll the cheese log into different an ingredient or a mixture of ingredients to coat the outside. Good coatings are parsley, poppy seeds, cracked black pepper, chives, basil, thyme, crushed pecans or any other herb, spice, seeds or nuts. Chopped dried tomatoes are another good choice.
