Medieval Cheese-and-Onion Pie

 


1/2 batch of Medieval Pastry Dough

3 to 4 medium Onions, finely chopped

Fresh Herbs, sprig of each: sage, basil, thyme

1/4 cup dried Currents ( OR Raisins, Prunes, Cranberries), finely chopped

2 tablespoons Flour

1 cup of your favorite Creamy Cheese, grated (Havarti, Muenster or other)

8 Eggs, beaten

1 tablespoon Butter, melted

1/4 teaspoon Saffron (can substitute Turmeric or leave out all together)

1/2 teaspoon Salt

1 teaspoon Poudre Douce

 

  Preheat oven to 350 F / 176 C

Roll out pastry dough, fit it into the bottom of a pie or quiche pan, set aside.

Parboil the onions with the herbs for 5 minutes, drain well. Press herbs dry and chop them finely Toss the currents with the flour.

Combine the eggs, onions, herbs, cheese, butter, saffron, salt and poudre douce in a bowl. Mix well and pour into the pie shell. 

Bake 30 to 45 minutes or until pastry dough is browned and a toothpick inserted in the middle comes out clean. Remove from oven and serve while still warm.
