Ironforge Rations

 


2 table. Butter

2 to 3 Shallots, thinly sliced (Green Onions work well too)

Salt/Pepper, to taste, optional

15 oz. can Haggis (or use a good Breakfast Sausage)

1 table. Flour

1 12oz Beer

4 to 6 Bread Slices, a good Rustic Bread is best, toasted

1 cup Cheddar, shredded


Melt butter in frying pan and add in shallots. Cook until they are translucent. *If using green onions, saute a little. Add into the frying pan the haggis or sausage and brown well - breaking all the pieces up to loosen them. Add in the flour and mix well. Cook until all the flour has been adsorbed. Into the skillet add in about 1/3 of the beer and cook until a thick gravy is formed. *If you want a thinner gravy and looser texture then add a bit more beer into the skillet to thin. Taste for seasoning, add salt and pepper if desired.

Divide out the meat mixture onto the toasted bread slices. Top each with the cheddar cheese. Place the rations under the broiler to melt the cheese then remove from oven, top with a little pinch of salt and pepper. Serve the rations while still warm.
