Feywild Eggs

 


9 Eggs

1/4 cup Parmesan Cheese, freshly grated

1/3 cup Herbs, mixed chopped herbs of your choice. *parsley, basil, dill, mint, tarragon, celery leaves are good choices but use your imagination, get creative with your herb choices.

1/2 teas Salt

Black Pepper, freshly ground, to taste

2 table. Olive Oil

1 Yellow or White Onion, finely diced

5 oz of Cheese, grated. *Fontina, Colby, Monterey Jack, Havarti or Gouda are good choices but not the only choices of cheese.


Preheat oven to 400 F. 

In a bowl, beat together the eggs, parmesan, herbs, salt and pepper until blended.

In a 10-inch nonstick oven proof skillet, warm the olive oil over medium-high heat. Add in the onions and saute around 3 minutes or until softened. Pour in the egg mixture and cook undisturbed  until the edges begin to set and the bubble appear in the center, about 1 minute. 

Sprinkle the grated cheese over the top of the eggs and place into the oven. Bake about 15 minutes or until the center of the eggs is set and the frittata has puffed up.

Gently run a spatula around the edges of the frittata to loosen it and ease it onto a serving platter. Let cool around 15 minutes. Cut into wedges and serve warm or room temperature. 

*Note: These eggs take well to all sorts of additions like sauteed bell peppers, mushrooms, asparagus, zucchini, scallions, cooked crumbled sausage or bacon or ham. Whatever you decide to add extra to these eggs, make sure to use nor more than 2 cups of it and make sure it's precooked and seasoned before adding to the eggs to the skillet - then bake your frittata.
