Bourbon Pork w/Mustard Sauce

 

 

Mustard Sauce: (Optional)

2 table. mayonnaise

1 table. Dijon mustard

1/2 tea. paprika

1/4 tea. garlic powder

Red pepper to taste, optional


Mix all together, cover and set in the fridge until ready to use.


Pork Chops:

4 to 6 pork chops

Salt/pepper, to taste

1/4 cup Kentucky bourbon or a good brandy

1/4 cup soy sauce

1/4 brown sugar, packed

2 cloves garlic, mashed or minced fine

1/4 cup Dijon mustard

1/2 tea. ginger, ground

2 table. Worcestershire sauce

1/2 cup vegetable oil

Hot sauce, to taste

4 fresh peaches, peeled, pitted and quartered OR 2 cans of peaches, drained. (Optional)


Mix together bourbon (brandy), soy sauce, brown sugar, garlic, Dijon mustard, ginger, Worcestershire sauce, vegetable oil and hot sauce. Blend well.

In a pan, add in the pork chop then salt and pepper both sides. Add in the peaches (if using) and top with the marinate, covered. Let them marinate for 3 to 6 hours. 

Preheat oven to 350 F. 

Remove the pork chops and peaches from the marinate and reserve the marinate. Place the pork chops and peaches in an oven proof pan. Bake covered for 30 minutes. Remove the cover and let them brown for 5 to 10 minutes on top. Remove from the oven and let them sit for 15 minutes covered. In the meantime, boil the reserved marinate on medium-low heat for 5 minutes until it reduces slightly. 

To serve: Put chops and peaches on a plate and drizzle the cooked marinate over the chops and peaches. Top with mustard sauce if using.
