Parmesan Garlic Mashed Potatoes


Ingredients

  • 8 large Russet potatoes (peeled or leave on the skin)
  • ¾ cup milk (full cream / whole milk)
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp butter
  • ½ cup grated Parmesan cheese 
  • Green onions, chopped 
  • Parsley, finely chopped

Instructions

  • Boil your potatoes on the stove in salted water for 20 to 30 minutes or until they are fork tender, drain water off.
     
  • Mash the potatoes with a potato masher or ricer.  
  • Heat the milk, garlic, salt, pepper and butter together until the milk starts to simmer. Remove from the heat and pour into the potatoes. Mix well.  
  • Stir in the Parmesan cheese then season to taste. Top with green onions, parsley and more Parmesan for serving.
