Ingredients
- 8 large Russet potatoes (peeled or leave on the skin)
- ¾ cup milk (full cream / whole milk)
- 2 garlic cloves, minced
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp butter
- ½ cup grated Parmesan cheese
- Green onions, chopped
- Parsley, finely chopped
Instructions
- Boil your potatoes on the stove in salted water for 20 to 30 minutes or until they are fork tender, drain water off.
- Mash the potatoes with a potato masher or ricer.
- Heat the milk, garlic, salt, pepper and butter together until the milk starts to simmer. Remove from the heat and pour into the potatoes. Mix well.
- Stir in the Parmesan cheese then season to taste. Top with green onions, parsley and more Parmesan for serving.
