Grilled Jalapeno Pimento Cheese

 


2 slices of good quality bread (sourdough, wheat, white or other)

1 container of pimento cheese

5 or 6 Jalapenos slices, optional

Pinch of paprika

Pinch of red pepper

Butter


Lightly butter one side of the bread - both slices done this way. 

In a skillet fry the bread on medium heat until golden brown on that side and remove bread from the heat.

 On the toasted side of the bread, spread the pimento cheese, sprinkle the paprika and red pepper on top of the cheese. Top the cheese with jalapeno slices. Top with the other slice of bread with the toasted side facing the cheese. 

Butter the outside of un-toasted bread on both sides and fry both sides of the sandwich until golden brown on each side. 

Remove sandwich from the pan and place on a plate. Let the sandwich cool for 2 to 3 minutes before slicing the sandwich in half to prevent the cheese from running out. 

Serve warm.
