Little Red-Cap's Oven Baked Sausage Brunch

 

Brothers Grimm: Inspiration 'Little Red Riding Hood'


1 table. sunflower or vegetable oil

4 sausage links (pork or vegetarian)

2 potatoes, cleaned and cubed (skin on or off)

4 mushrooms, cleaned (leave whole or quartered)

2 tomatoes, sliced

2 large eggs

Salt/pepper, to taste

*Optional: 4 to 6 slices of bacon

 

Preheat oven to 400f.

Pour the oil onto an oven proof dish and heat in the oven until hot. 

Put diced potatoes into a microwave safe dish and microwave potatoes covered for 8 minutes. Drain off the water that accumulates.

Add sausages and potatoes (and bacon if using) to the hot oiled pan and carefully coat the food in the hot oil. Bake in the oven for 10 minutes. 

Remove from oven and carefully add the mushrooms and tomatoes to the pan with sausage and potatoes and coat with them hot oil. Return to the oven and bake 10 to 15 minutes or until the potatoes are soft but golden brown. 

Remove pan from oven and carefully spread the food apart in 2 places. Crack the eggs into the holes on you have made in the food. Salt and pepper the eggs and tomatoes. Return to oven and cook 3 to 5 minutes longer or until the eggs are to your liking (runny yolks or hard cooked yolks and the egg whites are done) .

Remove from oven and serve hot.
