12 to 14lb smoked ham
2 cans of apricots in heavy syrup
1 teas. ground cloves
1 teas. ground cinnamon
1/2 teas. ground allspice
Bring the ham to a boil in plenty of water in a large pot on the stove. Drain, refill the pot with water and bring the ham to a boil. Reduce heat to medium-low and cover, let simmer 20 to 25 minutes per pound. (4 to 5 hours). If water level gets low, add more water. Cook until the ham reaches 155f in the center or until the ham pulls away from the bone easily. Drain the water and put the ham on a platter or cutting board and cover with foil.
In a saucepan, add the apricots with syrup, cloves, cinnamon and allspice. Bring to a boil then reduce heat, simmer for 10 minutes. Transfer to a blender and blend into a smooth sauce.
Slice the ham and serve with the sauce. Serves 24
For one or two people:
1 or 2 smoked ham slices
Pinch of cloves
Pinch of cinnamon
Pinch of allspice
3 or 4 tablespoons of apricot preserves
Fry the ham in a skillet on both sides, remove from skillet.
Add the apricot and spices into the skillet and whisk well. Add the ham back into the skillet, turn ham so all sides are covered in the apricot sauce. Simmer on low for 3 to 5 minutes.
