Potatoes Dauphinoise

 

Inspired by the story: The Poor Man and The Rich Man

 

1 1/2 to 2lbs potatoes, peeled if desired and thinly sliced

1 teas. nutmeg

1 garlic clove, crushed

1 cup heavy or double cream

1/2 cup Gruyere or cheddar cheese, shredded

Salt/pepper, to taste

*Onion, thinly sliced, optional

 

Heat oven to 350f.

Butter the inside of a baking dish. Cover the bottom of the dish with some of the potatoes, and season with salt, pepper, a pinch of nutmeg. Add some onions if using. Top with more potatoes, season - repeat this until all the potatoes and onion (if using) are gone.

Add the cream to a sauce pan and heat on low heat. Stir in the garlic. Heat on low for 3 to 5 minutes.Remove from the heat and gently pour cream over the potatoes. 

Top the potatoes with the cheese. Cover tightly with foil to prevent burning the top. 

Bake for 45 minutes. Remove the foil and bake another 15 to 30 minutes or until the potatoes are cooked through. IF the potatoes are still not quite ready, cover with foil to prevent burning and bake another 15 to 30 minutes longer. 

Remove from oven. Serve hot.
