Breakfast in Dorne

 

 

1 to 3 jalapeno peppers (to your taste)

Red, orange and green bell peppers

1 green cubanelle pepper

2 poblano peppers

1 medium onion

4 to 5 tablespoons of olive oil (more if needed)

1 ice cube

6 large eggs

1/4 cup cheddar cheese, grated

3 pinches of salt 

Ground black pepper (to taste)

 

Chop all peppers in long strips - set aside half of the stripped peppers. The other half of the peppers finish chopping/mince into little cubes. Chop,mince the onion into cubes.  

Pour 4 to 5 tablespoons of the olive oil into a deep frying pan and heat on medium heat. Saute the long strips of peppers until just soft. Remove from pan and keep warm. 

Add the minced peppers and onions into the pan ans saute until soft. Toss in the ice cube and cover the onions and peppers, let them steam until all the water leaves the pan. 

Add 2 to 3 tablespoons more olive oil if needed into the pan. Crack all 6 eggs into the skillet but do not stir or scramble them yet! Top with salt, pepper and the cheese. Scramble the eggs in the skillet. Keep the eggs moving until they are no longer runny. Remove from heat.

To serve: Add eggs to a plate and to the side of that add a bowl of the long stripped peppers. - Serve them side by side. Grind a pinch more pepper over the eggs.


*NOTE: Alter the peppers to your taste. Use sweeter peppers if you do not like the heat. Use hotter peppers if you prefer hotter peppers. 


*I did not have the colorful peppers so I used all green peppers in my dish.
