Rivendell Chicken Salad

Chicken salad served on tomato with a side of spinach, grapes,
cucumber and lemon (for squeezing over everything).


Chicken, cooked, shredded (leftovers are good for this)
Apples, diced
Onion, diced
Celery, diced
Cherry or Grape Tomatoes, quartered
Pickle Relish (Sweet or Dill), to taste
Real Mayonnaise, to taste

Toss all together and chill at least 1 hour. Serve on top of a tomato slice or a bed of lettuces.
