3 slices of smoked bacon, diced small
1 medium onion, finely chopped
1/2 to 1 whole jalapeno, minced fine
8 oz. chicken stock
15 1/2 oz. can of black bean or pinto beans, keep the liquid
Salt/pepper, to taste
8 oz. fresh cilantro, chopped or 1/2 table. dried cilantro (optional)
Cook the bacon with the onion and jalapenos over medium heat until onions are transparent. Reduce heat to low and cook around 45 minutes to 1 hour or until the onions are a deep brown color.
Pour the beans with the juice into the pan with the bacon and mash the beans with a masher, Add the chicken stock, stir and bring to just under a boil. Reduce heat to low and simmer 1 hour, stirring often. Add more stock if necessary to keep from burning and sticking. Cook to desired constancy. Stir in salt, pepper and cilantro. Serve warm.
