2 cups flour
1 tea. salt
1 tea. baking powder
1 tea. baking soda
3/4 cup unsweetened cocoa powder
2 cups sugar
1 cup oil
1 cup hot coffee
1 cup milk
2 eggs
1 tea vanilla or almond extract
1. Mix all dry ingredients in a large bowl: flour, salt, baking powder, baking soda, cocoa powder and sugar.
2. In another bowl, mix all wet ingredients: oil, coffee, milk, eggs and vanilla.
3. Mix both wet and dry ingredients together. *The batter will be very thin.
4. Pour the batter into a greased cake pan - your choice of size.
5. Bake at 325 F for 25 to 30 minutes or until the cake tests done.
6. Cool the cake in the pans before removing.
7. Drizzle with the warm chocolate ganache glaze.
*Note: You may have to adjust your oven setting and the bake time on the recipe. I baked mine at 325 for 30 minutes and it was nowhere near done. I had to turn my oven up to 350 F and bake another 45 minutes then the cake came out perfect!
Warm Ganache Glaze:
8 ounces of dark or milk chocolate bits
1/4 cup heavy cream or whipping cream
1 tea. powdered sugar
1 tea. vanilla extract
Put all ingredients in a pan and on very low heat melt the chocolate - stirring well. Careful not to scorch the chocolate. Drizzle over the Mount Doom cake so it looks like the rough terrain of Mordor.
*Add cherries to the top of each slice to represent the Eye of Sauron.
