Dorothy's Toast

 


1 sprig of fresh Rosemary finely chopped (or some dried Rosemary, bruised)

1 log of Goat Cheese or  Mock Goat Cheese

1 jar of Apricot Jam or Preserves

8 slices of Bread (French Spice is best but any good bread loaf is fine)


Toast your bread to your liking. Slice your cheese into about 1/8-inch thick slices. Spread apricot jam onto the bread, top with goat cheese slices and sprinkle with rosemary. Serve.
